Shrimp in Prosciutto al Formaggio Massachusetts Recipe

1/2 pound prosciutto, thinly sliced
1 pound medium shrimp, peeled and deveined
1/2 pound butter
4 cloves garlic, chopped
4 shallots, chopped
1 tablespoon flour
2 cups dry white wine
juice of 1 lemon
2 sprigs fresh basil, chopped
4 ounces sun-dried tomatoes
8 ounces mozzarella cheese, grated
4 ounces Parmesan-Romano cheese, grated
Preheat oven to 375 F. Cut prosciutto in half lengthwise and wrap each shrimp in a slice. In a large saute pan melt butter, cook garlic and shallots until soft. Add flour and continue cooking for 2 minutes; add wine, lemon juice, and basil. Cook until reduced by a third. In a small pan boil water and cook sun-dried tomatoes 3 minutes, drain, and add to wine sauce. In a greased casserole bake shrimp in prosciutto 20 minutes; cover with cheeses and continue baking until cheese is bubbly. Top with wine sauce and serve with rice or pasta. Makes 4 servings.
