Shrimp and Crab Gazpacho Rhode Island Recipe

12 fresh ripe tomatoes, peeled and seeded
3 cloves garlic
1/2 cup each sweet yellow, red, and green pepper
3/4 cup scallions, white part only
3 cups cucumber, peeled, seeded, and diced
1/2 cup olive oil
3 tablespoons lemon juice
1-1/2 teaspoons salt
1/2 pound small shrimp, cooked and chilled
1/2 pound crabmeat, cooked and chilled
croutons for garnish

Place tomatoes and garlic in blender or food processor, blend until
rough-chop stage. Dice peppers and scallions. In a large mixing bowl place tomatoes, cucumbers, peppers, scallions, olive oil, lemon juice, and salt, and mix well. (Some cooks prefer to use their food processor for all the vegetables and blending.) Chill for 2 hours, and ladle into small soup bowls.

Cut shellfish into bite-sized pieces and divide equally among servings. Top with croutons and freshly ground pepper. Makes 8 servings.
