Scottish Shortbread Vermont Recipe
2-1/2 cups flour
1/2 cup rice flour (improves the texture a bit, but is not necessary)
OR
3 cups flour
1 cup butter
1/2 cup granulated-sugar
Preheat oven to 300 F. Sift the flour onto a
board or counter. Cut the butter into the flour as if you are making a
piecrust. Add sugar and knead until the dough is soft, the consistency
of Play-Doh. Press dough into a pre-seasoned shortbread mold that has
been dipped into granulated sugar, flattening in until dough is 1/2
inch thick. Turn onto a greased cookie sheet and bake for 45 to 50
minutes. Shortbread should be pale in color when baked, with the
bottom a golden color. Makes 20 cookies.
