Rhode Island Sirloin àla Mama Recipe
3 ounces olive oil
4 tablespoons garlic, chopped
2 sirloin steaks
1 large tomato, diced
1/2 cup pepperoncini, sliced
4 ounces pepperoncini juice
4 ounces dry white wine
4 ounces black olives, sliced
3/4 pound linguine
Heat oil in skillet and sauté garlic until it is
just about to brown. Add steaks to pan and sear on both sides. Add
tomato, pepperoncini slices and juice, wine, and olives. Cook steaks
until desired doneness; meanwhile, boil linguine. Fan sliced steak and
serve over linguine with cooking sauce.
Garnish with chopped parsley, tomato wedge, and
garlic bread. Makes 2 servings.
