Rhode Island Lobster Scampi over Angel Hair Pasta Recipe
3 lobsters (1-1/4 pound each)
1/2 pound butter
3 doves garlic, chopped
1 teaspoon flour
2 ounces cream sherry
1 cup chicken stock
1 fresh basil leaf
1 pound angel hair pasta
Parmesan cheese for garnish
crushed red pepper
Boil lobsters and remove meat; set aside. Melt butter in large sauté
pan and cook garlic (do not brown). Add lobster meat and flour, and
cook for 2 to 3 minutes. Add sherry, chicken stock, and basil leaf
simmer for 2 to 3-minutes.
Serve over angel hair pasta with grated Parmesan
cheese and a light sprinkling of red pepper flakes. Makes 2 to 4
servings.
