Oatmeal and Apple Scones Recipe
(adapted from a recipe in Country Living
Magazine)
1 1/4 cup rolled oats
3 cups unsifted all-purpose flour
4 teaspoons baking powder
1 tablespoon vanilla sugar (regular granulated sugar
will work fine)
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon allspice
2/3 cup unsalted butter
1 golden delicious apple, chopped
1 1/3 cup buttermilk (or soured milk)
Heat oven to 425 degrees F. Grease baking sheet. Combine dry
ingredients in bowl of food processor. Cut butter into dry ingredients
using pulses, until the mixture resembles coarse crumbs.
Transfer to mixing bowl. Add apples and
buttermilk to mixture. Stir until just bound together. (Mixture will
be gooey--that's okay.) Turn dough on to heavily floured board. With
floured hands, knead 6 to seven times to form soft dough. Divide
mixture in half. Roll halves
into 7" rounds. (At this point, you can put the dough in a plastic bag
in the fridge and baked when ready. I've kept them for up to five
days.) Cut each round into four wedges. Place on baking sheet and bake
for 15-18 minutes, until golden brown. Serve immediately.
