Country Fruit Crisp

6 cups fresh fruit, peeled and sliced
--(approx. 8 pieces of fruit-peaches and
--pears make a nice combination)
1/3 cup sugar
1/2 tbsp. lemon juice
1/2 tsp. lemon peel, finely grated
1 cup quick cooking oats
1/3 cup brown sugar, firmly packed
2 tbsp. all-purpose flour
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
4 tbsp. butter
Preheat oven to 400 degrees.
In a large bowl, toss fruit with sugar, lemon juice and lemon peel. Place 1 cup of fruit in each lightly greased ceramic boat or one large 9 inch round Pyrex. Combine oats, brown sugar, flour, cinnamon and ginger. Cut in butter with a fork or pastry blender until mixture is crumbly. Sprinkle over fruit. Bake for 25-30 minutes, or until fruit is bubbling and topping is crisp. Hold in 175 degree oven, covered with foil.
